Chipotle's Burrito Bowl

Thanks to my friend Meredith, I am addicted to Chipotle's burrito bowl! For those of you that have never been to Chipotle or had their burrito bowl. DON'T DO IT!!!! SAVE YOURSELVES......I started the tradition of having the burrito bowl once a week, eating it on my way to my biblestudy. My biblestudy will be wrapping up in the next few weeks, so instead of trying to cure my addiction, I thought "Maybe I could make this at home!"

I went out an googled "Chipotle recipes" and low and behold the burrito bowl was found.

Chipotle's Adobo Marinated Chicken Ingredients

1 1/2  - 2 lbs of boneless chicken breast
1-2 tsp adobo sauce from a can of chipotle peppers in adobo sauce
3 Tbs lime juice
1 garlic clove, crushed (didn't use)
1/2 tsp chili powder (didn't use)










1) Place all ingredients in plastic zip top bag and marinate in the refrigerator for at least an hour or up to 24 hours. ( I didn't have a zip lock bag, so I put the chicken in a Tupperware container and it marinated a little under 24 hours)












2) Grill on outdoor grill or cut in bite sized pieces and cook in skillet with 1-2 Tbs oil. Cook over medium heat, stirring frequently till done.














Cilantro-Lime Rice

8  cups of Water
2 cups Basmati Rice
2 Tbs lime juice
1/2 cup chopped cilantro
1/4 tsp salt











1) Bring the water to a boil in a large pan
2) Stir in the rice, cook uncovered at a medium boil for 12 minutes
3) Drain the rice in a colander
4) Put rice back in cooking pot, stir in cilantro, lime juice and salt













Vegetarian Black Beans


2 cans black beans - 1 drained and 1 undrained
1 tsp chili powder (didn't use)
1/2 tsp cumin
1/8 tsp allspice
1 garlic clove, crushed (didn't use)
1/2 salt
1/4 tsp sugar

1) Pour the beans into a small saucepan
2) Stir in the other ingredients
3) Heat over medium heat until hot













Mild Salsa

5 Roma tomatoes, seeded and chopped
1 garlic clove, crushed (didn't use)1/4 cup red onion, diced (didn't use)
1/4 tsp salt

(Basically, I just diced up one tomato)

First of all, I think I need to get major points for having given this a try and....did you see all the ingredients I had to use.....I might just take a nap today to recoup!!! ( A little dramatic, huh!)



1) Preparation Time: Aside from the marinating of the chicken, 20 minutes
2) Presentation: Good
3) Did I like the meal? Yes
4) Would I make it again? Yes, with as much as I made, I will be eating on it for a little while, this might just cure my addiction!
